手打ちうどん

1月22日 当社レストランのIzakaya Gomaでは寛文5年堂さんの稲庭うどんを使用しています。 大変好評なのですが、円高の影響もあり仕入れ値が高くなってきました。 当然売値も上げなければいけないのですがこれ以上の値上げは難しいと判断し在庫が終わり次第終了する事にしました。 でもうどん好きのお客様に向けて他ではないうどんの提供を続けたいという思いから手打ちうどんを始めよう思います。 シドニーのほとんどのレストランでは茹で冷凍麺を使用しています。讃岐うどんの太さの麺が主流なので当社では稲庭うどんより少し厚みのある麺を作りました。 コシもあって喉越しもいい麺ができたと思います。 茹で冷凍麺と比べるとコストは2.5倍くらいになってしまいますが、稲庭うどんと比べたらかなり安くできました。 来月より店舗にて販売を開始します。 その後シドニーレストランへのおすすめもはじめます。 ご興味のある方はご連絡ください。
